Cut off the cut surface again with a sharp knife and remove the yellow juice with a cloth.
Cut off both sides of the leaf with the thorns.
Remove the leaf rinds at the top and bottom.
Tip: use the outside of the knife.
The gel-like inside of the leaf can now be processed further. Simply cut into small pieces or puree with a hand blender.
